1/2 cup neutral oil, I used coconut

1/2 cup honey or syrup (maple or golden)

3 cups rolled oats

Add ins 

I used what I had or …. use what you like or don’t like!

Roughly a 1/4 cup of each of the below 

Pumpkin seeds

Sesame seeds

Raisins/sultanas

Chopped dried apricots

Coconut - desiccated or flakes

Chia seeds

Dried cranberries

Nuts

Cinnamon?

The options are endless

Add oats to a bowl. Melt the oil and syrup/honey and pour over oats and mix well. Spread on a baking tray and cook at 180c

Mix and check every 5-10 minutes bring the outside golden oats into the middle - be careful as it can burn easily.

Once it’s all golden and crunch - around 20 minutes remove from oven and mix in the options you like. Leave to cool and store in an air tight container. You can freeze in a ziplock bag too.

Great with yoghurt or fruit for breakfast brunch.

Interesting - ish info on Granola

In 1863, American health reformer Dr. James Caleb Jackson created a cereal called "Granula" at his health spa in New York. It was made from baked whole wheat flour that was crumbled into chunks — more like hard nuggets than today’s loose mix.

A few years later, Dr. John Harvey Kellogg (of Kellogg’s Corn Flakes fame) made a very similar product at his Battle Creek Sanitarium. Because Jackson already owned the name Granula, Kellogg called his version Granola instead (to avoid trademark issues).

Over time, "granola" became the common word for any toasted mixture of grains, nuts, seeds, and sweeteners — much closer to what we think of today.
