Lemon Drizzle Cupcakes or Loaf

Dairy Free! No butter $$$

275 g self raising flour

150 g castor sugar

1 teaspoon baking powder

170 ml water

100 ml plain oil

1 lemon zest and juice

Topping 

Juice of a lemon

1/2 cup castor sugar or icing sugar

Castor makes it a little crunchy, use icing sugar if you prefer a smooth drizzle.

You can basically mix all ingredient and it makes a great loaf or 12 muffins.

Bake 180 c for 12-15 minutes for muffins. Loaf takes around 35-40 minutes. Check if ready by using a clean skewer to check loaf not gooey in the middle. Pour over the drizzle mixture when still warm.
