A to Oui: E is for Eclair
Light choux pastry, silky filling, and a glossy icing on top—few French treats are as iconic as the éclair.
“As a Claire, I couldn’t resist this one. Claire comes from the French word clair, meaning bright or clear, as in Clair de Lune (‘light of the moon’). An éclair’s name means ‘lightning’—a flash of light. Whether it’s named for its shiny glaze or because it’s eaten in a flash, it seemed the perfect choice for E.”
I used various recipes and googled techniques quite a few times as it has been years since I made choux pastry or creme patissiere.
