A to Oui: E is for Eclair

Light choux pastry, silky filling, and a glossy icing on top—few French treats are as iconic as the éclair.

“As a Claire, I couldn’t resist this one. Claire comes from the French word clair, meaning bright or clear, as in Clair de Lune (‘light of the moon’). I used various recipes and googled techniques quite a few times as it has been years since I made choux pastry or creme patissiere.
