Citrus Got Real….

Lemony Oat Slice - No bake

1 cup Oats  

120g butter 

1/2 tin condensed milk 

250g wine biscuits 

1 cup desiccated coconut    

zest of 1 lemon 

Lemon Icing 

1 ¾ cup icing sugar 

3 tbsp lemon juice 

15g room temperature butter 2 tbsp toasted coconuts

Line a 20 x 30cm slice tin with baking paper.

In a pan or glass bowl melt the butter and condensed milk over low heat/microwave.

Either by hand or in food processor crush the biscuits until they resemble fine breadcrumbs.  

Add the crushed biscuits and oats to melted butter mixture, mix and then add coconut and lemon zest. 

Press the mixture into prepared tin and press evenly to cover the base of the tin. 

To make the icing combine icing sugar, lemon juice and butter in a bowl and beat until smooth. Spread the icing evenly over the slice. Sprinkle over toasted coconut and zest and refrigerate till set.
