Weet Treat
A regular in our house for many years. The good old Weet-bix Slice. I used half butter, half coconut oil in this one and it turned out just as delicious, and the bonus is we don’t need to re-mortage the house this week to purchase NZ butter :-(
1 cup brown sugar
125g of butter (I used half butter half coconut oil)
1 egg
1 tspn of vanilla
2 tablespoons cocoa powder
2 tablespoons golden syrup
1 cup self raising flour
1/2 cup coconut
5 crushed weet-bix
Melt butter in bowl or large pot. Add sugar, vanilla, egg, and syrup. Add in dry ingredients. Press into lined or greased slice tin and back 180c for 10-15 minutes. We like ours quite soft and gooey. Cook more if you like it more set.
