Sweet as ………kumara brownie!
Kumara + chocolate = a mash made in heaven!
Well I’ve tried Carrot Cake and grated Courgette in cake and even Beetroot. But never Kumara.
I saw the recipe and just took a screen shot and then was not able to find it again or give someone credit for it :-/ Although they did call it sweet potato so possibly American.
But the no flour no butter thing worked out really well. Fudgey and sweet and gooey.
Individual Kumara Chocolate Brownies
1 large Kumara
2 eggs
3/4 cup brown sugar
80 g dark chocolate melted and cooled slightly
1/4 cup coconut oil
1 teaspoon vanilla extract
1/4 cup cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup chocolate chips
Preheat the oven to 180c.
Line a muffin tin with liners.
Poke the sweet potatoes a few times with a fork. Microwave on high until cooked through, for about 10 - 20 minutes depending on the size of your potatoes. Cut kumara and scoop out flesh and mash.
In a large bowl, beat the eggs and brown sugar with a hand mixer until they are fluffy and light.
Add the melted chocolate and coconut oil to the egg mixture and beat again to combine.
Next, add the mashed sweet potatoes and vanilla.
Mix well to combine everything. Stir in the cocoa powder, baking powder, and salt until well combine. Fold in chocolate chips and then spoon into liners.
Bake 12-15 minutes. Serve warm with cream, or greek yoghurt of vanilla ice-cream!
